Cathy
and I opened our first restaurant, “Rick’s” in
August 1981. Over the next 18 years the restaurant doubled
in size, added an outdoor patio, and eventually moved to
a spacious new location around the corner.
In
1999, after closing Rick’s, we formed a restaurant
consulting and management business, which led us to develop,
design, and build a restaurant for the property owner (known
as The Blue Parrot ( now Limestone
Restaurant) on N. Hurstbourne Lane. Incredibly, The Blue Parrot opened
on Monday, September 10, 2001.
Several years later, we had the opportunity to reopen Rick’s in
it’s original location, and, as they say, it was “back
to the future”. After three successful years, and with
the desire to operate a more intimate restaurant, we sold Rick’s and
have now opened The Blackstone Grille. We are incredibly
proud of The Blackstone, as we are of our wonderful

Our Chef
Chef Alastair Holland has been working
in Louisville restaurants and country clubs for more
than 15 years. Now, at the age of 32, he is a seasoned veteran
at pleasing the palates of local patrons, who have access to
some of the most diverse restaurants in the country.
Chef Al
has an uncompromising belief in using only the freshest and
highest quality foods available, a true passion for treating
every guest
like a “V.I.P.”, and a desire to make every guest
a “regular”.
Chef Al also believes in surrounding himself with skilled
and dedicated staff members who share his belief that every
guest leave completely satisfied.
So naturally, he feels
his association with proprietors Cathy and Rick Dissell is
a perfect match with
his ideals and standards.
